Achari Paneer Tikka | Easy Indian Vegetarian BBQ Recipe
Achari Paneer Tikka Ingredients 400g paneer, cut into cubes 1 green pepper, cut into chunky cubes 1 orange or yellow pepper, cut into chunky cubes 2–3 tomatoes, deseeded and cut into chunky cubes (use as many vegetables as you like) 2 onions, cut into quarters and separated into petals 4 tbsp gram flour (besan) 4 tbsp Greek yogurt ½ tsp Kashmiri chilli powder ½ tsp turmeric powder ½ tsp cumin powder 1 tsp coriander powder 1 tsp fennel powder 3 tsp lime pickle (adjust to taste and the strength of your pickle) 1 tbsp kasuri methi ¼ tsp garam masala Salt to taste 4 fat cloves garlic, minced or crushed About 5g ginger, minced or crushed A splash of water Butter, for basting Method Cut the paneer into cubes and cut the peppers, onions, and tomatoes into chunky pieces. Remove the tomato seeds and set everything aside. Dry roast the gram flour in a pan over medium heat, stirring continuously until fragrant. Do not let it burn. Transfer the roasted gram flour to a bowl. Add the Greek yogurt, Kashmiri chilli powder, turmeric, cumin powder, coriander powder, fennel powder, lime pickle, kasuri methi, garam masala, salt, garlic, ginger, and a splash of water. Mix into a thick marinade. Divide the marinade between two bowls, using more for the paneer and less for the vegetables. Coat everything well and leave to marinate while you prepare the barbecue. Thread the paneer and vegetables onto skewers, placing a piece of pepper at each end to help keep everything secure. Alternate the paneer and vegetables as you like. Cook the skewers over a hot barbecue until the paneer develops a light char. Baste with butter and continue cooking until everything is cooked through without burning.
