Why multipurpose? You should know that in the restaurant industry, there are five mother sauces, including tomato sauce, which are used to finish and complete all the recipes served. For this reason, the sauce must be neutral, without any overpowering flavors other than tomato, and it must be easily replicated to ensure a standard. I want to explain how to make this simple sauce and how to complete it to your liking. Preparation time: 70 minutes, difficulty level 2/5, vegan, gluten-free, lactose-free Ingredients for 700 g of sauce 800 g canned peeled tomatoes 2 medium-small onions EVO oil to taste Salt and pepper to taste About 10 basil leaves 700 g of finished sauce can season 8 portions of pasta. In a 24–26 cm diameter pot, add 2 tbsp of oil and the finely chopped onion. Brown well and add the peeled tomatoes. Choose "sauced" peeled tomatoes, meaning they have sauce instead of water, for optimal yield. For 800g of peeled tomatoes, add 300ml of water to dilute, salt, and half the basil. Bring to a boil, reduce the heat to low, cover with a lid, leaving a gap open with a wooden spoon, and cook for an hour, stirring occasionally. Remove from the heat and use a food mill to grind the sauce, thus separating any remaining seeds and tougher onion pieces. Return the sauce to the same pot and bring to a boil again for one minute. Add the remaining basil. If desired, you can immediately, while the sauce is still boiling, fill jars that have been sterilized and sealed immediately. They will keep for up to a year in a cool place. Or you can store it in the refrigerator for up to 4 days and use it as a pasta sauce, for scallops pizzaiola, in fish soup, with mussels, or in any dish that calls for a good tomato sauce.
