They’re not overly tangy, just nicely balanced with a light lemon aroma and a sweet blueberry flavor. They honestly taste like mini cheesecakes in cookie form 😊 🥄Ingredients (9 Cookies) [Blueberry Cream Cheese Filling] 145g Frozen Blueberries 40g Granulated Sugar 12g Lemon Juice 180g Cream Cheese 12g Powdered Sugar [Cookie Dough] 110g Unsalted Butter 40g Egg 60g Brown Sugar 40g Granulated Sugar 2g Salt 175g Cake Flour 15g Cornstarch 3g Baking Powder 3g Lemon Zest 2g Vanilla Bean Paste ✔Bake in a preheated convection oven at 180°C (355°F) for 17 minutes. If you want more browning or a crispier texture, bake for an additional 2–3 min. ✔Store them in the fridge or freezer (recommended)! Leaving them at room temperature too long can make them soggy because of the moisture from the cream cheese filling. They taste even better slightly thawed after freezing! ✔I don’t recommend substituting baking soda. It can cause the blueberry color to bleed and make the cookies look moldy
