Makes 2 croissants Ingredients: 6 sheets rice paper 2 eggs 1Tbs melted butter 1/4 cup milk 1/4 tsp cinnamon 1/2 tsp vanilla 1.5 Tbs sugar, plus a bit to sprinkle on top 1/4 tsp baking powder 1 pinch of salt Directions: Preheat oven to 350F. Combine all ingredients, except rice paper, in a small mixing bowl. Whisk until combined. Pour the egg mixture into a shallow dish that is slightly larger than each spring roll wrapper. Working with one sheet at a time, dip each spring roll wrapper into the egg mixture and coat it thoroughly. Lay the sheet of rice paper onto a flat surface like a cutting board and repeat with 2 more sheets, stacking them on top of each other. When you have a stack of three cut a triangle out of the middle of the stack. Take one of the 2 pieces on the side and lay it parallel over the top of the triangle. With the remaining piece lay it on the base of the triangle, perpendicular. Starting from the base, roll the rice paper stack up and place it on a parchment lined backing sheet. Shape it into a croissant. Repeat with remaining 3 sheets of rice paper to make the second croissant. Sprinkle with sugar and bake for 30-35 min or until crispy on the outside and golden brown.
