How do you say goodbye to a place that changed the way you travel? 🇹🇼 My final day in Taiwan turned out to be the perfect ending. Instead of rushing through another checklist of attractions, I slowed down and explored Taiwan’s quieter eastern coast—meeting capybaras, lambs, and other animals at Zhang Mei Ama’s Farm (張美阿嬤農場), relaxing in the natural hot springs of Qingshui Geothermal Park (清水地熱公園), harvesting fresh scallions at a local farm, and learning how to make authentic Taiwanese scallion pancakes from scratch. Somewhere between soaking my feet in volcanic water, sharing a simple lunch cooked using geothermal springs, and comparing Taiwanese scallion pancakes to Indian parathas, I realised this wasn’t just another travel day. It was everything I’d come to love about Taiwan. On my last night, I wandered through Taipei one final time. I stumbled across street performances, accepted food from kind local vendors, ate way too much street food (again), and soaked in the atmosphere before saying goodbye. Sometimes the best endings aren’t dramatic. They’re simply quiet reminders of why you’ll want to come back.
