If you have too many zucchini (or squash), or if they're too large, or if you want to enjoy them this winter, then this pickle recipe is for you. Here it is: Ingredients: 3 kg zucchini (or squash works too) 800 ml herb vinegar 800 ml water 800 g sugar 30 g curry powder 100 g sea salt 6 bay leaves pepper Instructions: Day 1: Dice 3 kg of zucchini, add 200 g of onions cut into crescent shapes, and add 1/2 cup (100 g) of sea salt. Day 2: Rinse the zucchini and onions well. Make a syrup with 800 ml herb vinegar, 800 ml water, 600 g white sugar, 6 teaspoons of curry powder (approx. 30 g), and 1 teaspoon of pepper. Cook this syrup for 2 minutes and pour it over the zucchini. Day 3: Drain everything, reserving the syrup, and cook it with 200g of sugar. Pour this mixture back over the zucchini. Day 4: Add the bay leaf, cook for 10 minutes, and fill the jars while still hot. Seal immediately. Yield: 7 1/2 5dl jars. You can keep them for several years!
