It’s creamy, simple, and topped with glossy passion fruit for that perfect sweet-tart finish. Honestly, I sometimes prefer it over baked cheesecakes because it’s lighter and so easy to put together. You can use any biscuits (cookies) you like for the base — this time I used ANZAC biscuits, but I really like just the plain Marie or Scotch Finger biscuits too. The filling comes together with cream cheese, condensed milk, lemon juice, and gelatine, and the topping is a simple homemade passion fruit jelly like glaze.
