HEATWAVE to Severe STORM! ⛈️ Camper Life Denmark + Low-Carb Macaroni

☀️ From Heatwave to Severe Storm! ⛈️ | Camper Life in Denmark DK After a few beautiful, warm days on the road, we decided it was time to escape the intense summer heatwave for a bit! 🚙💨 Before making our way toward Odense, we spent a wonderful night relaxing on the stunning island of Helnæs. To beat the rising temperatures, we headed out for an early morning grocery run so our doggies 🐶 wouldn't have to stay inside a hot camper. Afterward, we treated ourselves to a lovely lunch with a stunning view over the water at Kafé Kamma. ☕🥗 But camper life always keeps you on your toes! As soon as we arrived at Helnæs Camping and finished setting up our spot, we heard a deep rumbling in the distance. 😲 Dark clouds completely raced towards us, sending us into a frenzy to pack everything away as fast as possible. Just in the nick of time, a massive summer storm hit us with intense thunder, heavy winds, and flying hail! ⛈️🌪️ Luckily, our motorhome kept us completely safe and undamaged. Once the wild weather calmed down, we drove onward to Odense to spend the rest of the week catching up with family. ❤️ We pulled into a lovely camper place (Lundgaard Grethe & Poul Nielsen) where we received a wonderfully warm welcome from Ben and Frieda, who arrived earlier. Later that week, we set off to explore beautiful Odense together with Coen, Stine, and Nick. We walked through the most charming historic streets, visited the famous birthplace of Hans Christian Andersen, and tried some traditional Danish treats like romkugler and hindbærsnitter! 🇩🇰🥧 We also grabbed a bite to eat at Storms Pakhus Food Court—an incredible place absolutely packed with unique food stalls under one roof. 🍔🌮 It is definitely a must-visit if you are traveling through Denmark! Of course, our stay wouldn't be complete without another sudden downpour hitting us while sitting under the awning. 🌧️ But a little rain couldn't ruin the fun! We ended a fantastic day with Ben and Frieda over a highly competitive game of Tokkenspel. 🎲 Let's just say things got pretty intense! 😉 -------------------------------------------------- 🍲 Recipe: Low Carb Macaroni Ingredients: 100 g low carb macaroni (https://lisakookt.nl/products/pipe-ri...) 500 g minced beef 1 onion 1 red bell pepper 1 leek 2 garlic cloves 400 g chopped tomatoes 150 ml passata 1 tbsp olive oil erythritol (to taste) ½ tsp lemon juice Parmesan cheese Spices: Paprika powder, coriander, cumin, turmeric, chili powder, thyme, bay leaf, parsley, salt & pepper Instructions: 1. Brown the minced beef in a pan with the olive oil. 2. Add the chopped onion, red bell pepper, leek, and garlic and cook briefly. 3. Add your spices and cook for 1 minute to release the aromas. 4. Add the chopped tomatoes, passata, erythritol (to taste), and ½ tsp lemon juice. 5. Simmer gently for 20–30 minutes to let the flavors blend. 6. Remove the bay leaf before serving. 7. Serve hot mixed with your cooked low carb macaroni and top generously with Parmesan cheese! 🧀 -------------------------------------------------- 📣 Important Update: We are going on a 2-week holiday! ☀️ That means there will be no vlogs for the next 2 Saturdays.
