[Today's Recipe] "Basic Pork Soup" Made in a Pressure Cooker In a pressure cooker, all you need to do is cut the ingredients into large chunks and add them! The quick pressure cooking and natural decompression bring out the natural flavor of the ingredients without using dashi. It's easy even for beginners, so be sure to give it a try! Ingredients (Serves 4) Daikon radish: 5-8cm (approx. 250g) Carrot: 1/2 (approx. 80g) Fresh shiitake mushrooms: 2 Green onion: 20cm Burdock: 100g Fried tofu: 1 Konjac: 100g Pork belly: 100-150g Water: 3 cups For garnish Miso: 2-3 tablespoons (Optional) Chopped green onion Directions 1) Peel the daikon radish and cut into 1cm chrysanthemum shapes. Peel the carrot and cut into 1cm half-moon shapes. Remove the stems from the fresh shiitake mushrooms and thinly slice them. Cut the green onions into 2cm lengths. Wrap the burdock root in aluminum foil. Scrape the skin off with a rolled up lid and rinse with water. Slice diagonally into 5mm thick slices. Wrap the fried tofu in kitchen paper to remove excess oil and cut into bite-sized pieces. Pound the konjac once, then cut into bite-sized pieces, rub with salt, and rinse with water. Cut the pork belly into 3cm lengths. 2) Place all ingredients except the pork belly into a pressure cooker and spread the pork belly on top. Add the required amount of water, close the pressure cooker lid, set to high pressure, and heat. 3) Once boiling and pressure is built up, pressure cook for 0-2 minutes, then turn off the heat and continue cooking until the pressure releases. Wait (about 10 minutes). *Pressure cooking times vary depending on the pressure cooker (see below for details). 4) Once the pressure has released, open the lid and dissolve the miso. Don't add all the miso at once.
