(Magyarul lent) It’s been about five or six years since my pizza journey began. What started as a hobby slowly grew into a true passion that became part of my life. Back then, there were very few resources online that spoke honestly and openly to people like me—those just starting to explore this amazing universe of pizza. The great Italian pizzaiolos were still quite reserved, and quality English-language content was almost nonexistent. That’s when I discovered Marco Fuso online. A truly knowledgeable, experienced, yet humble and approachable pizza master from Italy, living in London, who shares the deepest secrets of the pizza universe. A cheerful, smiling adventurer who explains things clearly, in English—the universal language—exactly in the way that hobbyists like me need the most. I’ve learned so much from him. He was the one who taught me what biga really is—and with that, a whole new world opened up for me. He set me on the path toward contemporary pizza, and his influence was the foundation of my early Canotto successes, those iconic cornicione explosions! Then, in September, I had the great honor of meeting him in person during his visit to Hungary as a pizza ambassador. We spent some time together and recorded a friendly, open conversation where he spoke with humility about his journey, achievements, challenges, and the more personal, intimate side of the pizza world. Van már jó öt-hat éve, hogy elindult a pizzás utam. Először csak hobbiként, aztán lassan mindent átható szenvedélyként vált az életem részévé. A kezdetekkor azonban alig akadtak olyan tartalmak a neten, amelyek őszintén, nyíltan segítették volna a hozzám hasonló úton járókat. A nagy olasz pizzaiolók világa akkoriban még zárkózott volt, és angol nyelvű, minőségi tudásmegosztásból sem volt sok. Ekkor találtam rá az interneten Marco Fuso-ra. Egy igazi, nagy tudású, tapasztalt, mégis közvetlen és alázatos pizzamester Olaszországból, aki Londonban él, és a pizzás univerzum legmélyebb titkaiba is beavat. Vidám, mosolygós kalandor, aki érthetően, világnyelven, angolul adja át tudását – pont úgy, ahogy arra a hozzám hasonló hobbistáknak a legnagyobb szükségük van. Rengeteget tanultam tőle.
