Pasta with toasted breadcrumbs is a delicious example of Sicilian humble cooking. We use this technique in an easy dish with canned fish. Muddica, or mollica atturrata, is breadcrumbs toasted in a pan that in Sicilian cuisine are used to top pasta and other dishes. It's known as "the poor man's cheese" because it originated as an inexpensive alternative to grated Parmesan, but now it's used more for pure enjoyment: it adds a wonderful extra touch of flavor and crunch to anything you put it on. Another advantage of this toasted breadcrumb is that you can flavor it with garlic, herbs, lemon zest, or butter. In today's recipe, we toast it with parsley and flaked anchovies in oil because we're using it for spaghetti with canned fish. The canned sardines, cherry tomatoes, and muddica (you might have some left over with the recipe, but it's worth making extra) make an irresistible combination.
