Ingredients: For the cake: 8 eggs 50 g sugar 250 g 70% dark chocolate 100 g butter Toppings (optional): 500 ml heavy cream 50 g vanilla-flavored powdered sugar Instructions: 1. Prepare the oven. Preheat the oven to 160°C (325°F) and place a tray of hot water on the bottom rack to create steam. 2. Whisk the egg yolks. Separate the egg yolks from the whites. Whisk the yolks with half the sugar until very light and fluffy. 3. Melt the chocolate. Melt the butter and chocolate together in the microwave, in short bursts, stirring between each burst to prevent overheating. 4. Whip the meringue. With a perfectly clean bowl, whip the egg whites. When they begin to foam, add the remaining sugar and continue whipping until you obtain a stiff meringue. 5. Mix everything together. Combine the melted chocolate with the whipped egg yolks and then gently fold in the meringue to maintain the air. 6. Bake. Transfer the mixture to a greased baking pan and bake for 50 minutes at 160°C (325°F) with steam in the oven. 7. Serve if desired. You can serve it with ice cream, toffee, or vanilla whipped cream. It has a texture somewhere between a cake and a baked mousse, a deep chocolate flavor, and is absolutely spectacular.
