Making Brinjal Choka - simple and delicious more traditional recipe
Hi all Today's recipe is a throwback to when I still lived with my in-laws. My father in law would plant a lot of vegetables, including brinjals that when they beared would mean an oversupply for a very short period. So we would try various ways to cook the brinjal out including bhajias, in dhal and in chutney. However we also enjoyed a good brinjal choka or bhaijan choka served simply with dhal and rice or dhal and roti and if we had it, pickles! Ingredients 500g potatoes, parboiled 500g brinjal (2 large brinjals) 6 clove garlic 2 tbs oil salt and pepper to season 1/4 onion diced fine 2 green chillies spring onions 1 tsp fine salt, adjust to taste 1/2 tsp jeera seeds 1/2 tsp mustard seed 1 dried red chillie splash of olive oil Served with dhal and rice and crushed chillie pickle.
