Ingredients: For the salad 1/2 cucumber, diced 2 celery stalks, sliced 5.3 oz (150 g) cherry tomatoes, halved 4 romaine lettuce leaves or iceberg lettuce leaves, chopped 7 oz (200 g) canned beans, drained and rinsed 1 tbsp finely grated Parmesan cheese For the dressing 2 tbsp lemon juice 1 tsp mustard 3 tbsp olive oil Salt to taste For the croutons 3 slices sandwich bread, cut into cubes Olive oil, for drizzling 1 tsp dried garlic Salt to taste Instructions 1. In a large bowl, combine the cucumber, celery, cherry tomatoes, and lettuce. 2. Mix well. At this stage, the salad can be stored in the refrigerator until ready to serve. 3. Add the drained beans. 4. In a small bowl, whisk together the lemon juice, mustard, olive oil, and salt. 5. Pour the dressing over the salad and toss well. 6. Add the grated Parmesan and mix again. Make the croutons 1. Cut the bread into small cubes. 2. Drizzle with olive oil. 3. Add the dried garlic and a little salt. 4. Toast in a skillet over medium heat until golden and crispy.
