93 year old Nonno Vincenzo cooks us his specialty dish Pasta e Ceci (chickpeas)#cooking#easyrecipes

We had the pleasure of spending the day with owner and founder of Sandhurst, one of Australia's leading suppliers of preserved and pickled vegetables, sauces and much much more. Vincenzo visits the factory (where his sons have now taken over) and cooks them lunch everyday, what a gem! A true Italian family man. Listen to his story of how and why he migrated to Australia and how he built up this company from literally nothing. Check out his recipe below and let us know if you make it, it was absolutely delicious and a real "hug in a bowl" and nutricious meal Pasta e Ceci - NONNO VINCENZO 1 carrot, diced 1 celery stick, diced 1 small brown onion, diced 100g pancetta, cubed 1 vegetable stock cube 2x 380g packet/can of Sandhurst Chickpeas Water 1 nest of Tagliatelline 6 tablespoons of Olive oil Serves 4 1.Heat olive oil in a small saucepan/pot, add onion and saute’ until translucent then add in the pancetta and cook until browned. 2.Add in the carrot and celery, cook until all the vegetables have softened. 3.Drain the water from the chickpeas and add the 2 packets of chickpeas into the pot. 4.Fill the containers that the chickpeas were in with water and add then to the pot, add in a stock cube and stir. 5.Bring to the boil, cover with the lid them cook over a low heat for around 30 minutes. Taste for salt, add if needed. 6.After 30 minutes add about half a cup of water and crush 1 nest of tagliatelline into the pot. Cook with the lid on until al dente, use the packet instructions to indicate how long the pasta needs to be cooked. Serve with a drizzle of extra virgin olive oil and a side of bread.
