Passata making for 1! Nonna Bart makes a small batch of passata, no BIG ITALIAN FAMILY needed!

Nonno Bart’s Passata We welcome back Nonno Bart to the channel, you may recall he was born in Vallo della Lucania, Province of Salerno, Campania and now lives in Sydney since 1967. With the tomato season almost over he shows us what he does with the last of his tomato crop. He has collected the last of the tomatoes and today he makes passata with around 2kg of San Marzano, Ox Heart and Roma tomatoes. This is the version of “Sauce Day” without the big Italian family and the dramas along the way! Once the passata is made, he cooks it up and enjoys some of it for lunch, with the excess sauce he delivers it in batches to his children and grandchildren and also saves a batch in the freezer. He also tells us about his time in the Army and we get a little garden tour Method for making a small batch of Passata. Boil tomatoes with a small amount of water. Once the tomatoes have softened pass them through the tomato press, then pass the skins through another 2 times. Saute ½ chopped onion in a large pot and add in the tomato pulp along with some of the water. Add salt and 1 teaspoon of sugar, alternatively place a whole carrot in place of the sugar. Cook on high heat for 20-30 minutes or until the sauce has thickened. Turn off the heat and add in a bunch of basil. This gives the maximum flavour of the basil infused sauce.
