It is best to do this in a blender so that the butter does not have time to melt.. Roll out the dough to the size of a 24 x 32 cm mold and place it on the bottom of a mold lined with baking paper. Pierce with a fork and bake at 200 degrees - about 20 minutes ❤️ Rhubarb mass: 1 kg of peeled rhubarb and cut into pieces 0.5 cups of sugar 0.5 cups of water 1 bag of pudding, or 2 tbsp. l. starch 75 ml of water (mix with pudding/starch) 2 packs of raspberry / strawberry or cherry jelly Pour about half a cup of sugar into the rhubarb and add half a cup of water. Put on the fire, stirring. Mix the pudding in the water and pour it into the rhubarb when it becomes soft. Stir gently and wait until the mass thickens. Turn off the fire and now you can pour in the jelly. Stir until the jelly dissolves. Set aside until completely cooled. Place on the shortcrust pastry and put in the refrigerator until completely solidified. ❤️ Now you can prepare the cream: 500 g heavy cream (30-33%) - chilled 500 g mascarpone 3 tablespoons powdered sugar (vanilla extract) Whisk with a mixer Spread the cream on top of the rhubarb, level it and put it in the refrigerator. After a few hours, when the mass is completely stabilized, put the meringue. ❤️ Meringue: 4 egg whites (room temperature) 1 cup fine sugar 1 tablespoon starch handful of almond flakes Bake in an oven preheated to 130 degrees for an hour, then reduce the temperature to 120 degrees and bake for another half an hour.
