This time, it's "Eggplant with Miso" ▷Only 2 ingredients! ▷An incredibly versatile make-ahead dish✨ ▷Perfect with rice & easy variations introduced♪ 【Recipe Notes】 ■Eggplant with Miso Ingredients (for an easy-to-make amount) ・Eggplant 4 (350g) ・Ginger 1/2 piece ・Salt 1/4 teaspoon (for water extraction) ・Sesame oil 1 tablespoon ◉Seasonings ・Sugar 2 teaspoons ・Miso 2 tablespoons ・Mirin 1 tablespoon ① (Preparation) Line a tray with kitchen paper ② Remove the calyx and stem from the eggplant ③ Cut lengthwise into 3-4 pieces, then cut lengthwise again to make sticks, then cut horizontally into cubes ④ Spread the eggplant on a tray lined with paper towels. ⑤ Sprinkle with a small amount of salt, mix quickly, and let sit for about 5 minutes (Point 1). ⑤ Peel the ginger and finely chop it. ⑥ (After 5 minutes) Pat the eggplant dry with paper towels to remove excess moisture (Point 2). ⑦ Heat sesame oil in a frying pan and sauté the ginger. ⑧ Once the ginger is fragrant, add the eggplant and sauté over medium heat (Point 3). ⑨ Once the eggplant is golden brown, add the sugar and sauté briefly. ⑩ Add the miso and mirin and sauté while dissolving the miso. ⑪ Turn off the heat and let it cool down.
