Smashed Potatoes - A fun side dish everyone in your family will love!

Smashed Potatoes 1 1/2 pounds small yellow-fleshed potatoes 1/4 cup olive oil 1 teaspoon butter, room temperature 2 Tablespoons Balsamic Vinegar 3 gloves garlic, minced 1 teaspoon dried rosemary 1/2 teaspoon dried sage 1/2 teaspoon ground thyme 1/2 teaspoon dried savory, optional 1/2 teaspoon sea salt 1/2 teaspoon black pepper Boil the potatoes until they are just tender and a sharp tipped knife slides in easily, about 15 minutes. Drain and allow to cool slightly. While potatoes are cooling, stir the rest of the ingredients together in a medium bowl, set aside. Preheat oven to 450°. Line a baking sheet with parchment paper. Place the potatoes on the baking sheet and, using the flat bottom of a cup, press down on each potato to slightly crush it. Spoon a small amount of the oil/herb mixture over each potato.
