Learn how to bake homemade sourdough baguettes with a crispy crust and a light airy crumb. In this video, I’ll show you every step — from mixing the dough and fermentation to shaping, scoring, and baking. These sourdough baguettes are crispy on the outside, soft and airy on the inside, The aroma while baking is incredible, and the flavor of fresh homemade bread is something you simply can’t buy in stores. There’s something special about baking your own bread — the smell filling your kitchen, the crispy crust, and that first warm slice of fresh bread. Fresh homemade sourdough baguettes are on another level🤍 🔹 Ingredients: 320 g water 140 g active sourdough starter 500 g bread flour 10 g salt (+ 20g water to dissolve it) I use 13% protein bread flour. If your flour has less protein, reduce the water slightly. Lower-protein flour usually absorbs less water. 🔹 Hydration tip: You can start with a slightly lower hydration level than the 68% shown in the video to better understand how your flour behaves, which may differ from the one shown in the video. Example: 64%: 300g + 20g with salt 🔹 Baking Bake at 482°F (250°C) for 15 minutes. Remove the top parchment and bake 15 more minutes until golden and crispy. Amount of water used for steaming: 140ml/g 🔹 Note After the coil fold, let the dough continue fermenting until it doubles in size. In my kitchen at 79–81°F (26–27°C), this took around 2 hours. The timing can be different for everyone and depends on your kitchen temperature and even your sourdough starter activity. Try not to follow the time shown in the video exactly — focus on how much your dough has risen. 🔹 About the Sourdough Starter Before baking, make sure your sourdough starter is active and ready to use. Feed it 7–8 hours before mixing the dough so it can fully develop. For this recipe, use a starter fed at a 1:2:2 ratio: 20 g sourdough starter 40 g water 40 g flour The starter should be well risen, slightly domed, and at its peak when used.
