It's the perfect homemade bread recipe for those who want that fresh-baked taste without waiting overnight, a great option for busy schedules. Enjoy delicious fast bread with minimal fuss! Recipe makes 2 loaves Ingredients: 500 g all-purpose flour 500 g bread flour, 13% 600 g water 20 g salt 50 g butter 50 g honey 3 g yeast 200 g sourdough starter (10g starter +100g water +100g flour prepared the night before) Schedule: Start with a 20-minute autolyse. Add sourdough starter and yeast. Begin bulk fermentation at 76°F / 24.4°C. Give one fold during bulk. Let the dough rest, then preshape. Shape after a short rest. Preheat the oven while the dough proofs. Bake covered, then uncover and finish to your preferred color. Bake: Preheat the ceramic bakers in the oven. Bake covered at 465°F / 240°C for 25 minutes.
