Long time no see! This is Kurokina. I moved to a rural area in Aichi Prefecture. On a day in early summer, I made pesto with basil I picked from my garden. I also made jam with Juneberries that ripened for the first time this year. I was full of anxiety after moving, but this is a record of how I've settled in. 【Making Pesto🌿】 Basil 50g Olive oil 100ml Garlic 1 clove Pine nuts or walnuts 30g Parmesan cheese 2 tablespoons Salt 1/2 teaspoon Pepper a pinch ⚪︎Soaking walnuts in water overnight removes bitterness and makes them tastier. Roast them in a 160°C oven for about 15 minutes. Then, mix everything with a hand blender. It can be stored for 3 days to 1 week. Cover the surface with olive oil. 【Making Juneberry Jam🫐】 290g Juneberries 90g Sugar 1-2 teaspoons Lemon Juice Sprinkle sugar over the Juneberries. Once some liquid comes out, put it on the heat. Simmer until boiling, add the lemon juice, and strain through a sieve. However, there were too many seeds, and the fruit would disappear, so I put it back into the juice that came out, removed as many seeds as possible, and packed it into jars. You could also blend it in a blender and strain it through a sieve.
