Located in Yakuin, Chuo Ward, Fukuoka City, Uchino Delicatessen is a small shop specializing in handmade Japanese side dishes. Owner Uchino previously worked in product planning for an apparel company. Although he had no professional experience in the food industry, his love of cooking inspired him to open the shop a year ago, creating dishes that are simply an extension of home cooking. The shop's dashi is carefully made from kombu kelp and bonito flakes, slowly extracted over low heat without allowing it to boil. Rice bran oil is used for frying, and every ingredient—from sesame oil and olive oil to sugar and meat—is thoughtfully selected. "Even if it's not expensive, I don't want to use poor-quality ingredients." Rather than creating meals for special occasions, his goal is to make everyday dishes that people never grow tired of eating. Rice is cooked throughout the day in three traditional clay pots to ensure every serving is freshly prepared. During lunchtime, the shop offers a daily bento box, while in the evening the focus shifts to freshly made side dishes. On this particular day, batches of fried chicken, chicken wings, fried small shrimp, meatballs, tofu hamburg steaks, fried rice, and Japanese rolled omelets were prepared one after another. One of the shop's signature dishes is its Wagyu Kinpira. Based on the kinpira his mother used to make—a dish he has always loved—it has been recreated with his own personal touch. His hope is to create a neighborhood delicatessen where people living alone or older residents can stop by casually and enjoy a variety of homemade dishes in small portions. "If you come to our shop, you'll always find something good to eat." Along with the food itself, he values the conversations shared with customers. With calm precision, Uchino prepares each dish with care and attention. We spent a day following the work of this handmade delicatessen as it celebrates its first anniversary.
