Hello on this beautiful day, everyone 😸🌿 Today is our one vegetarian day of the week 😋 Come join me in the garden to pick some fresh veggies and cook healthy meals together 🍲 For breakfast, I started the day with a balanced meal : soy milk, a grain salad, an onsen egg, grilled mochi dipped in sweet condensed oat milk, and coconut toast. Filling, delicious, and light on the stomach 🥗 Today I’m also chatting about hair care, how I take care of my hair, keep it healthy, prevent damage, and do a simple hairstyle when I’m at home 💇🏻‍♀️ Then it’s time to head out to my little backyard garden and harvest fresh vegetables for dinner. There are all kinds of adorable radishes 🍒, Black Cherry and Washington tomatoes 🍅, collard greens, and choy sum. Everything is grown organically, without chemicals, good for both the body and the soul 💚 For dinner, I made three vegetarian dishes using vegetables from the garden. The first is japchae-style mixed vegetable stew 🍲, cooked in the Instant Pot with shiitake mushrooms and tofu. It’s savory, slightly sweet, full of flavor, and only takes about 15–20 minutes. So delicious 😛 The second is tam makhuea 🍆, a roasted eggplant dip based on the recipe I grew up with. It’s full of the smoky aroma of grilled eggplant, garlic, and shallots. The heat comes from fresh Thai garlic, and it’s naturally sweet and flavorful. I served it with boiled eggs, fresh vegetables, and grilled chilies. The third is stir-fried kale with vegan salted fish 🥗. The vegan salted fish is made from soybeans, and I used mature kale from my backyard garden. Both the stems and leaves are delicious in this dish. Thank you so much for watching and for all your support.
