Spinach is one of the vegetables most widely eaten in Kenya. Served with coconut milk, it's a delicacy and can be combined with many dishes. The spinach is creamy and gets a lovely acidity from the tomatoes. It's delicious, easy, and very quick to make. It's an excellent side dish to many dishes.
