Whenever you have no idea what to order in a café, just go for the cheesecake. Cheesecake is one of those classics that never disappoints us, it's smooth, rich and melt-in-your-mouth, people love it. There are so many different flavors and recipes for cheesecake. The recipe for this Earl Grey Soft Heart Cheesecake comes from Mr. 山田浩二 who is the owner of the Mr Cheesecake Bakery in Tokyo. Different from European and American cheesecakes, Japanese cheesecakes are lighter and more refreshing. The flavor of Earl Grey tea really complements the creaminess of the cheesecake. Here's the recipe for Earl Grey Cheesecake 📍Baking mold size: 17x8x6 cm ✎ Ingredients cream cheese 146g, softened granulated sugar 73g whipping cream 73g Earl Grey tea 6g white chocolate 37g sour cream 132g plain Greek Yoghurt 37g, unsweetened whole egg 85g, room temperature lemon juice 7g cornstarch 14g ✎ Instructions 1. Lightly grease the baking mold and line with baking paper. 2. Using a spatula, beat the softened cream cheese until soft and smooth. 3. Place the whipping cream and tea in a small pot and heat over a medium-low heat, stirring gently, once boiling around the sides, turn off the heat and cover with a lid, let the tea infuse for a while. 4. Add the white chocolate into the heavy cream until just melted and stir well. 5. Pour the whipping cream into the cream cheese mixture, mix well with a spatula or whisk. 6. Add the sour cream and Greek yogourt into a bowl and make it creamy and smooth. 7. Add in the egg in three batches, mixing well each time. 8. Pour in the lemon juice and mix well. 9. Add the cornstarch and mix until no dry flour is visible. 10. Pour the sour cream mixture into the cream cheese and sift through a fine sieve to make it smooth. 11. Place the baking tin in a large bowl and fill with hot water to about a third of the height of the tin. 12. Preheat the oven to 210°C and bake for 20 minutes, then bake for a further 15 minutes at 150°C. Adjust the baking temperature and time depends on your oven. 13.
