Healthy Millet Plum Cake | 500g | Eggless | Christmas Special A wholesome and festive 500g Healthy Millet Plum Cake made with ragi, jowar, jaggery, flaxseed, curd, and coconut oil. Loaded with dry fruits, tutti-frutti and warm spices — this cake is soft, flavourful and perfect for guilt-free celebrations! ✔ Eggless ✔ No refined sugar ✔ No maida ✔ Millet-based ✔ Super soft & bakery style 📌 Ingredients (500g Cake) Dry Ingredients Ragi flour – 80 g (½ cup) Jowar flour – 80 g (½ cup) Arrowroot powder – 40 g (⅓ cup) (or Cornflour) Flaxseed powder – 10 g (1 tbsp) Baking powder – 1 tsp Baking soda – ¼ tsp Cinnamon powder – ½ tsp Salt – 1 pinch Wet Ingredients Jaggery (powdered) – 120 g (¾ cup) Curd – 120 g (½ cup) Milk – 105 ml (7tbsp) Coconut oil (or ghee) – 60 ml (¼ cup) Vanilla extract – 1 tsp (optional) Dry Fruits (Total 120–150 g) Chopped cashew – 20 g (2 tbsp) Tutti-frutti – 25 g (2 tbsp) Chopped cherries – 15 g (1 tbsp) Dates (chopped) – 30 g (3 tbsp) Dry grape (black) – 20 g (2 tbsp) Dry grape (brown) – 20 g (2 tbsp) Optional: Soak all dry fruits in warm water/(or orange juice) for 10–15 mins for extra softness. 📌 Instructions 1. Prepare Dry Fruits Soak chopped dates, raisins, tutti-frutti in warm water or orange juice for 10–15 mins. Drain and dust lightly with 1 tbsp ragi flour so they don’t sink. 2. Mix Dry Ingredients In a bowl, sift together: ✔ Ragi ✔ Jowar ✔ Arrowroot (or cornflour) ✔ Flaxseed ✔ Baking powder ✔ Baking soda ✔ Cinnamon powder ✔ Salt Mix well and keep aside. 3. Prepare Wet Mixture In another bowl, whisk curd until smooth. Add jaggery powder and whisk until dissolved. Add coconut oil/ghee, milk, vanilla, and orange zest. Mix until smooth and well combined. 4. Make Batter Add dry ingredients to the wet bowl. Gently fold using cut & fold method. Add soaked & dusted dry fruits. Mix gently. (Batter should be thick but pourable. Add 1–2 tbsp extra milk only if needed.) 5. Bake Line a 6 inch round cake tin (or loaf tin (7×3 inch). Pour batter, tap once. Top with chopped nuts fruits Bake in preheated oven at 170°C for 40–45 mins. Check with a toothpick. Cool completely before slicing. 📌 Tips for Best Results Do not overmix — millet cakes turn dense. Add extra 2–3 tbsp milk if batter becomes too thick. Soaked fruits give the cake a moist, plum-cake style texture. Store in an airtight container for 3–4 days. For richer flavour, keep the cake overnight before serving.
