Tonight's Japanese Dinner === DESCRIPTION === This crispy tofu and chive savory pancake (chijimi) is the healthy comfort food you've been waiting for β made with 150 g of firm tofu, it's high-protein, satisfying, and packed with garlic chives, carrot, onion, and savory dried shrimp. Think of it as a Japanese-Korean savory pancake: crispy on the outside, chewy inside. Let's cook it together. π₯’ βΌ INGREDIENTS (Makes 2β3 large pancakes) Main β’ Firm tofu β 150 g β’ Egg β 1 β’ Garlic chives β 1β1.5 bunches β’ Carrot β 1/3 β’ Onion (small) β 1 β’ Dried shrimp β 14 g Batter β’ Cake flour β 100 g β’ Potato starch β 100 g β’ Water β 120β150 ml Seasoning β’ Chicken stock powder (or 2 pinches salt) β 1 tsp β’ Sesame oil (for frying) β generous βΌ DIPPING SAUCE β’ Soy sauce β 1 1/2 tbsp β’ Vinegar β 1 tbsp β’ Sugar (or honey) β 1 tsp β’ Sesame oil β 1 tsp β’ Grated garlic β just a touch β’ Toasted white sesame β generous βΌ HOW TO MAKE IT 1. Mash the firm tofu. Cut the garlic chives into ~4 cm pieces, and julienne the carrot and onion. 2. In a bowl, mix the tofu, egg, cake flour, potato starch, water, and chicken stock powder into a batter. 3. Stir in the garlic chives, carrot, onion, and dried shrimp. 4. Heat plenty of sesame oil in a pan. Pour in the batter and spread it thin. 5. Fry until crispy and golden, then flip and fry the other side, pressing down for extra crispiness. 6. Cut into pieces and serve. Serve with the dipping sauce above β scoop it up with each bite. βΌ TIPS FOR COOKING ABROAD β’ "Chijimi" is a Japanese-Korean savory pancake (similar to Korean pajeon) β crispy edges, chewy center. β’ The firm tofu makes it high-protein and lower-carb than a typical flour pancake, while keeping it moist. β’ Use plenty of sesame oil and don't move the pancake too early β that's the secret to crispy edges. β’ Dried shrimp adds a savory umami punch; leave it out for a vegetarian version.
