Umami Mushroom & Turkey Chanpuru — Okinawan-Style Tofu Stir-Fry

Tonight's Japanese Dinner === DESCRIPTION === This umami-packed chanpuru piles a mountain of mushrooms and pan-seared turkey luncheon meat onto golden, crispy-edged tofu, all tied together with a simple Japanese seasoning mix. It's an Okinawan-style stir-fry that's fast enough for a weeknight but tastes like something special. ▼ INGREDIENTS (Serves 2) Main • Mixed mushrooms (shimeji, maitake, etc.) — 150 g • Turkey meat (luncheon meat, sliced) — 1/2 can • Tofu (firm/momen) — 1 block (300 g) • Sesame oil — 1 tbsp • Garlic — 2 cloves Japanese seasoning mix • Dashi powder (granulated) — 1/2 tsp • Soy sauce — 1 tsp • Salt & pepper — to taste • Salted dried kelp (shio kombu) — to taste • White sesame seeds — to taste To finish (optional) • Bonito flakes (katsuobushi) — to taste • Green onion, sliced — to taste ▼ HOW TO MAKE IT 1. Press the tofu well: wrap it in paper towels and let it drain thoroughly so it won't fall apart in the pan and can soak up plenty of flavor from the mushrooms. Cut into bite-sized pieces once drained. 2. Heat half the sesame oil in a pan and lay the tofu pieces in without moving them too much, searing both sides until deeply golden. Set aside on a plate. 3. Add the remaining sesame oil to the same pan and cook the turkey meat and garlic until lightly browned, then pile in all the mushrooms. 4. Let the mushrooms sear over high heat without stirring too often — cooking off their moisture this way concentrates their umami and gives them a deep, toasty flavor. 5. Once the mushrooms are tender and fragrant, return the tofu to the pan. Add the dashi powder, salt, pepper, and salted dried kelp, then toss everything together quickly over high heat. 6. Finish by drizzling the soy sauce around the edge of the pan so it sizzles, then give everything one last toss. Scatter white sesame seeds over the top, and finish with a generous handful of bonito flakes and a sprinkle of green onion if you have them. ▼ TIPS FOR COOKING ABROAD • No turkey luncheon meat on hand? Regular ham or a plant-based luncheon meat both work well. • Shio kombu (salted dried kelp) can be found at Asian grocery stores or online — if you can't get it, a small pinch of extra salt plus a dash of soy sauce gets you close. • Pressing the tofu well is the key step — don't rush it, or the tofu will break apart in the pan.
