Direttamente dall' Holy Trinity dell'American Barbecue oggi parliamo di sua maestà...IL BRISKET. Come al solito vi invito a lasciare un like, un commento e iscrivervi al canale (a voi non costa nulla ma per me è importantissimo) Qui sotto vi lascio i link ai miei social e a quelli di alcuni maestri in questo settore, oltre che gli ingredienti per rifare anche voi questo spettacolare pezzo di cultura barbecue. Instagram JS1599:   / js1599_official   Instagram Pitmassive:   / pitmassivebbq   Instagram MyBarbecuye.it:   / mybarbecue.it   Ingredienti: Punta di petto di manzo 6,5/7 kg Rub a piacere (io ho fatto un double layer con Black & White e Magic Bark di ‪@JS1599_Official‬) Ho lasciato la carne in frigo coperta con la pellicola per circa 10/12 ore poi una volta passato il secondo strato di rub l'ho messa in affumicatore a 120°C/250°F per circa 8 ore. Ho preparato il foil con la butcher paper dove ho inserito anche una generosa dose di beef tallow. Parola d'ordine per il brisket e più in generale per l'American Barbecue è la pazienza. Tempi lunghi, cotture lente e temperature controllate (low & slow). Questi sono i capisaldi di una cultura Made in U.S.A.
