Texas Style Spare Ribs - How to Cook Texas Spare Ribs
In this week's video we are going to be talking Texas Style Spare Ribs. These are a great option for ribs, that allows you to cook with minimal seasonings, probably seasonings you already have in your pantry. We are going to be seasoning with just salt, pepper, and seasoned salt. The finished product is a rib that is not sweet, but more of a savory flavor, where the flavor of the meat and bold seasonings really shine through. Cook Temp: 275°- 300° Cook Time: About 3 -4 Hours (or until the internal temp hits 195° - 205°) What you need: Rack of Spare Ribs Pepper (2 parts pepper) Kosher Salt (1 part salt) Lawry's Season Salt (just a dust, this is just going to provide some color) BBQ sauce Foil Start by getting your smoker fired up to 275°. While your smoker is coming up to temp go ahead and begin the prep work on the ribs. There is going to be a little trimming on a rack of spares, but its not a ton. First you will need to remove the breast bone from the rack and then you want to trim off any thinner pieces of meat that might burn on the smoker. We are not pulling the membrane off the back, just score it, the membrane will crisp up and cook away, so you will not even notice it is there after the ribs are done cooking. Now you can season the ribs, 2 parts pepper, 1 part salt. Start on the back side of the ribs with pepper first, this will allow the pepper to grab ahold of the meat, then come back with your salt, and then just a little Lawry's. After you have seasoned both sides of the rack let the rack just hang out for about 15 minutes, this allows the meat to sweat out and really take hold of the seasonings. Now place your ribs on the smoker, checking on them about every hour to make sure they are not drying out. If the ribs are drying out you can hit them with a spritz, the spritz can be whatever you like, I am just using a water and worcestershire mix (about 3 parts water 1 part worcestershire). After the ribs are tender and have reached and internal temp of around 195-206, pull them off of the smoker. Add just a small amount of BBQ sauce to to the sheet of foil and lay the ribs in the foil meat side down. Add a small amount of sauce to the bone side and wrap them up tightly in the foil. Now place the rack into a cooler or a cambro for 45 minutes - 1 hour. After the ribs have rested its time to slice them up and eat. Enjoy!! #texasstylebbq #bbqribs #cookingtips
