After more than seven decades, it is no coincidence that Matias remains famous for the quality and abundance of its premium meats. You will get a glimpse into the daily operations of this steakhouse: how the rodízio system works, which meats are featured in the service, and the work of the assadores (meat roasters) and waiters—a true symphony of flavors as piping-hot meat arrives at the customer's table. Today, the *espeto corrido*—or *rodízio*—has spread across Brazil and to cities around the world, becoming a hallmark of authentic Brazilian barbecue. It all began in the early 1950s, when Mr. Edwino Guilherme Mattes—known as Matias—was serving barbecue at a wedding. The venue was packed, and he had an idea: he asked the waiters to take the meat skewers directly to the guests' tables. This streamlined the service and ensured everyone received hot meat straight from the grill. After serving a few tables, if any meat remained on the skewer, the waiter would place it back on the grill. The work continued this way, ensuring hot meat was always available at the table. The concept was so well-received that Mr. Matias decided to adopt the system permanently. Success was immediate, and soon, owners of other establishments began showing up to see this new concept for themselves. And so, the espeto corrido (continuous skewer service) began to spread—first across the cities of southern Brazil, then throughout the country, and now even abroad. Carrying the weight of this tradition for so many decades hasn't daunted the successive generations that have taken over the Matias churrascaria business. In fact, after more than 70 years, the establishment remains a benchmark and one of the most popular spots in southern Brazil. Other establishments also claim to have pioneered the espeto corrido style. But the matter can be settled with a single question: has any of them been around for more than 73 years? Ultimately, though, that isn't the most important point. What matters most is that espeto corrido has become the hallmark of Brazilian barbecue. The key is knowing how to do it, and doing it well.
