After serving a few tables, if any meat remained on the skewer, the waiter would place it back on the grill. The work continued this way, ensuring hot meat was always available at the table. The concept was so well-received that Mr. Matias decided to adopt the system permanently. Success was immediate, and soon, owners of other establishments began showing up to see this new concept for themselves.
