Made with juicy tomatoes, tender potatoes, protein-rich soya chunks, and a blend of traditional Indian spices, this curry is perfect for everyday meals and special occasions alike. 💛 --- ✨ IN THIS VIDEO, YOU'LL LEARN: • How to prepare soft and flavourful soya chunks • The secret to a rich and aromatic curry base • Tips for perfectly frying potatoes and soya chunks • How to balance spices for a dhaba-style taste • Easy garnishing ideas for the perfect finish --- 🧂 INGREDIENTS: For Preparing Soya Chunks: • Soya chunks • 1 tsp salt • Hot water • Juice of ½ lemon For the Curry: • 2 tomatoes • 1-inch ginger • 2 green chillies • 2 onions • 8–10 garlic cloves • Boiled potatoes • 2 tbsp refined oil • 4 tbsp mustard oil • ½ tsp sugar • 1 tsp cumin seeds (jeera) • Small cinnamon stick (daalchini) • 1 dried red chilli • 1 bay leaf (tej patta) • 1 tsp turmeric powder (haldi) • 2 tsp coriander powder (dhaniya powder) • 2 tsp Kashmiri red chilli powder • ½ tsp black pepper powder (kaali mirch) • Salt as per taste • 1 tsp garam masala • 1 tsp kasoori methi • 3–4 drops kewda water • Fresh coriander leaves --- 👩🍳 METHOD: 1. Add 1 tsp salt to hot water and soak the soya chunks. 2. Squeeze in the juice of half a lemon and soak for 10–15 minutes. 3. Grind 2 tomatoes, 1-inch ginger, and 2 green chillies into a smooth paste. 4. Squeeze out the excess water from the soya chunks. 5. Heat 2 tbsp refined oil and fry the soya chunks until lightly golden. 6. Cut the boiled potatoes into cubes. 7. Heat 2 tbsp mustard oil and fry the potato cubes. 8. In the same kadhai, add 2 tbsp mustard oil and ½ tsp sugar. Caramelize until light brown. 9. Add cumin seeds, cinnamon stick, dried red chilli, and bay leaf. 10. Add chopped onions and garlic. Cook until golden brown. 11. Add ½ cup water. 12. Add turmeric, coriander powder, Kashmiri red chilli powder, and black pepper powder. Mix well. 13. Add the tomato puree and cook until the oil separates. 14. Add the fried potatoes and mix. 15. Add the soaked soya chunks and ½ cup water. Mix well. 16. Add salt as per taste. 17. Add garam masala, kasoori methi, and 3–4 drops of kewda water. 18. Garnish with chopped coriander leaves and mix well. --- ✔️ Your delicious Soya Aloo Curry is ready to serve! 🍛🥔✨ Serve it hot with roti, paratha, naan, jeera rice, or steamed rice for a comforting and satisfying meal.
