🌶️ Love spicy, tangy, and flavour-packed homemade pickles? 🤤✨ Today on Nupur's Crafty Kitchen, I'm sharing an Instant Hari Mirch Ka Achaar that's quick, easy, and bursting with authentic Indian flavours! Made with fresh green chillies, roasted whole spices, mustard oil, and a simple traditional technique, this pickle is the perfect side dish for dal-chawal, paratha, roti, khichdi, or any everyday meal. 💚🌶️ --- ✨ IN THIS VIDEO, YOU'LL LEARN: • How to make instant green chilli pickle at home • The perfect roasted spice blend for authentic flavour • How to prepare green chillies for the best taste • Why mustard oil is used in traditional achaar • A traditional jar sterilization method for better storage --- 🧂 INGREDIENTS: For the Spice Mix: • 2 tbsp cumin seeds (jeera) • 1 tbsp coriander seeds (dhaniya) • 1 tbsp fennel seeds (saunf) • 1 tbsp yellow mustard seeds • 1 tbsp black mustard seeds • ½ tbsp carom seeds (ajwain) • ½ tbsp fenugreek seeds (methi dana) For the Pickle: • Fresh green chillies • Salt (as per taste) • 3 to 4 tbsp vinegar • ½ tsp Kashmiri red chilli powder • 1 tsp turmeric powder (haldi) • 1 tsp asafoetida (hing) • 2 tsp nigella seeds (kalonji) • ½ cup mustard oil For Sterilizing the Jar (Optional Traditional Method): • 1 small piece of cinnamon (dalchini) • A little ghee • A pinch of asafoetida (hing) --- 👩🍳 METHOD: 1. Lightly roast the cumin seeds, coriander seeds, fennel seeds, yellow mustard seeds, black mustard seeds, carom seeds, and fenugreek seeds. Let them cool and grind into a fine powder. 2. Wash the green chillies thoroughly and dry them completely. 3. Cut the green chillies into small pieces. 4. Add salt according to your taste and 3 to 4 tbsp vinegar. Mix well and keep aside for 10–15 minutes. 5. Heat ½ cup mustard oil until it starts to smoke, then switch off the heat and let it cool slightly. 6. Transfer the green chillies to a large bowl. 7. Add Kashmiri red chilli powder, turmeric powder, hing, the ground spice mix, kalonji, and additional salt if required. 8. Pour the hot mustard oil over the mixture and mix everything well until evenly coated. 9. Sterilize a clean, dry glass jar. 10. Lightly burn a small piece of cinnamon, add a little ghee and a pinch of hing, then immediately cover the jar for about 5 minutes. This traditional method helps reduce moisture, adds a mild aroma, and may help keep the pickle fresh for longer. 11.
