For the filling, we’ve prepared two types: a refreshing tangy ‘Ume-an’ using syruped plums, and a gently sweet ‘homemade custard.’ It’s a body-friendly snack without sugar, dairy, or fats. By now, many people are probably already enjoying their ume preparations. Be sure to try making your own original ‘Ume-an’ using your prized ume syrup at hand. 【Ingredients】(makes 8 pieces) Common: Chewy tofu dough Silken tofu: 130g Rice flour: 50g Glutinous rice flour: 50g A pinch of salt Potato starch: as needed (for dusting) Honey Ume-an Sweet red bean paste (anko): 100g Honeyed plums: as needed (remove pits and finely chop) Custard cream Egg yolk: 1 Maple syrup: 30g Rice flour: 10g Soy milk: 100g Vanilla essence: a little ▼ Rice flour used https://amzn.to/4vSirZZ ▼ Glutinous rice flour used https://amzn.to/4e4JdZ1 (domestic sticky rice) 【Method】 ① Prepare the honey Ume-an Remove pits from the honeyed plums, finely chop them, and mix with the sweet red bean paste. Divide into 8 portions, form into balls, wrap in plastic wrap, and set aside. ② Make custard cream In a heatproof container, mix the egg yolk and maple syrup, then add rice flour and soy milk in order, mixing well each time. Heat in the microwave at 600W for 1 minute, take out and stir. Heat again for 1 minute (add 10 seconds at a time if still too runny). Add vanilla essence, cover with cling film, and chill in the fridge. ③ Make the dough Mash the tofu in a heatproof container, then mix in rice flour, glutinous rice flour, and salt. Cover loosely with plastic wrap and microwave at 600W for 2 minutes. Mix with a wet spoon. Cover loosely again and microwave at 600W for 1 minute. Mix well until shiny and springy. ④ Shaping Spread potato starch on a tray, transfer the dough, and sprinkle more starch on top. Divide into 8 portions with a spatula. Dust your hands with starch, flatten a piece of dough, wrap it around the ‘an’ or custard, shape it, and it’s done! Thank you for watching the video!
