Since it uses a smaller amount of rice flour, it turns out very soft, fluffy, and light, almost like a soufflé. No sugar is used in the batter; the gentle sweetness comes from honey, giving it a simple yet deep flavor. It's made with ingredients that are easy to use and safe. With this batch, you can make one pound cake and two paper muffin cups at once ♪ [Pan sizes] Pound pan: 5cm × 12.5cm × 4cm height Muffin pan: 7.8cm × 5.2cm × 7.8cm Ingredients (for 1 pound cake + 2 muffin cups) Eggs: 2 Honey: 35g Rice flour: 50g Powdered sugar: to taste (for finishing) ▼ Rice flour used (Kyoritsu Rice Flour) https://amzn.asia/d/04zvkC8t How to make castella: 1. Prepare the pan: Place the pound pan in the center of a sheet of parchment paper, make creases along all four sides, and cut slits at 4 corners (since it rises when baking, make it 3cm higher than the pan). 2. Crack the eggs into a bowl, add honey, and mix lightly. 3. Place over a hot water bath around 40°C, and whip at high speed with a hand mixer. Whip firmly until the batter leaves a trace for 3–5 seconds when lifted. 4. Finish by mixing at low speed for 1 minute to even out the texture. 5. Add half of the rice flour and fold it in well from the bottom using a spatula. 6. Add the remaining rice flour and mix gently from the bottom to not break the bubbles. 7. Pour the batter to the edge of the pan, pierce with a bamboo skewer to remove air bubbles. 8. Bake in a preheated oven at 170°C for 10 minutes (cover with aluminum foil if it looks like it might burn). Check with a bamboo skewer to see if the batter sticks. 9. After baking, drop the pan lightly from a height of 10cm and leave it for 3 minutes. 10. Peel off the parchment paper, transfer to a cooling rack, cover lightly with plastic wrap, and let cool.
