A courier was a professional runner who delivered letters and packages during the Edo period, a grueling job involving running dozens of kilometers along the highways daily. What kind of meals sustained such a life? Breakfast consisted of a filling meal to prepare the body, lunch was portable rations for eating on the road, and evening meals at inns to soothe tired bodies after a long day's work. Salt replenishment, preservation, portability, and recovery— Everything was optimized for "running." A truly rational and functional "worker's meal."
