This Chocolate Cupcake Went Viral Too — Still Just 1 Egg!

The chocolate version of my viral 1-egg cupcake is finally here — and it might be even better than the original. INGREDIENTS: • Room-temperature egg: 1 • Fine sugar: 3/4 cup (170 g) • Vanilla extract: 1 tsp • Vegetable oil: 1/2 cup (100 g) • Milk: 100 g • Yogurt: 50 g • All-purpose flour: 2 cups (250 g) • Cocoa powder: 30g • Baking powder: 1 tsp • Baking soda: 1/4 tsp • Hot water: 1/4 cup • METHOD: 1. Beat the egg, sugar, and vanilla until light and fluffy. 2. Add the oil, milk, and yogurt — mix just until combined. 3. Sift in the flour, cocoa powder, baking powder, and baking soda. 4. Add the hot water and gently mix until smooth. Do not overmix. 5. Pour into cupcake liners, leaving 1 cm space at the top. Top with desiccated coconut. 6. Bake at 200–250°C until well risen, then reduce to 180°C and bake until done (~15 min total, or until a toothpick comes out clean). 💡 Tip: Don't overmix after adding the flour and cocoa — this keeps the cupcakes soft and fluffy.
