This cut originated from a bet with a guy in Mato Grosso, around 2014, when I was doing/executing the "Vitrine da Carne" (Meat Showcase) project. When I finished my presentation, a gentleman in the audience approached me and said: "Gaucho, you're very good, but you have to stop inventing things. The next thing you know, you're going to tell me that filet mignon has bones." I thought quickly and said: "But my friend, I guarantee I can make a cut and leave the filet mignon with the bone!" Bet made! I went into the room, grabbed a ribeye steak with the bone in, and did the same thing I did in this video that I'm exclusively presenting here on YouTube. What happened? I won the bet!!!
