Caramelized onions, anchovies & Olives Pissaladière (Southern French Onion Tart) [Ingredients (6 servings)] 〈Dough〉 Flour: 300g Milk: 150g Olive oil: 100g Yeast: 20g (or 30g dry yeast) Salt: 6g Butter: 50g Sugar: 20g 〈Topping〉 Onions: 6 Niçoise olives: 130g Anchovies: 100g Olive oil: appropriate amount Garlic: 1 bulb Oregano or marjoram: appropriate amount Sugar: a pinch Salt and pepper: appropriate amount ⸻ [Instructions] ① Warm the milk and add the yeast. ② Mix the flour, milk, olive oil, and salt, and bring the dough together by hand. ③ Roll out the dough and let it rise for about 30 minutes to 1 hour. ④ Slice the onion (perpendicular to the fibers). ⑤ Sauté the onion in olive oil, garlic, and butter, then add a small amount of sugar and caramelize. ⑥ Cook slowly over low heat, stirring occasionally. ⑦ Roll out the dough by hand and create a border. ⑧ Place the onion on top. ⑨ Place the anchovies and olives on top (raw or lightly cooked). ⑩ Bake in a 180°C oven for about 20 minutes. ⑪ Drizzle with olive oil to finish. ⸻ 🇬🇧 English Recipe Pissaladière (Provençal Onion Tart) [Ingredients (Serves 6)] Dough • 300g flour • 150g milk • 100g olive oil • 20 g yeast (or 30 g dry yeast) • 6g salt • 50g butter • 20g sugar 〈Topping〉 • 6 onions • 130 g Niçoise olives • 100g anchovies • Olive oil (as needed) • 1 head of garlic • Oregano or marjoram • A pinch of sugar • Salt & pepper ⸻ [Instructions] 1. Warm the milk and add the yeast. 2. Mix flour, milk, olive oil, and salt to form a dough by hand. 3. Let the dough rise for 30 minutes to 1 hour. 4. Slice the onions (against the grain). 5. Cook with olive oil, garlic, and butter. Add a little sugar to caramelize. 6. Cook gently on low heat, stirring occasionally. 7. Flatten the dough by hand and form a border. 8. Spread the onions on top. 9. Add anchovies and olives (raw or slightly cooked). 10. Bake at 180°C (350°F) for about 20 minutes. 11. Finish with a drizzle of olive oil.
