Before becoming risotto, before arriving on Italian plates, rice was water, mud, toil, and bent backs. This episode of La Tavola Oscura tells the hidden history of rice in Italy: not only as a food, but as a landscape, labor, social memory, and popular culture. Today, rice seems simple, white, clean, and familiar. We find it in risottos, soups, plain rice, rice pudding, Roman supplì, Sicilian arancini, and many other Italian dishes. But behind that seemingly light grain lies a much more difficult story. In the rice fields of Northern Italy, between Piedmont and Lombardy, in the Po Valley, in the Vercelli, Novara, Lomellina, and Pavia areas, thousands of women worked for generations, their bodies bent over the water. They were the rice weeders: seasonal workers who entered the rice paddies to weed, pulling out weeds, wading through the mud, enduring mosquitoes, humidity, heat, surveillance, low wages, and harsh days. But their story is not just one of suffering. The rice weeders were also a symbol of dignity, skill, solidarity, collective singing, and social struggle. Voices, demands, strikes, and memories were born in the rice paddies that have marked the history of women's labor in Italy. Rice came from afar, but it was in Italy that it found a new form: in the canals of the Po Valley, on the farms, in varieties such as Arborio, Carnaroli, and Vialone Nano, and above all in the gastronomic transformation of risotto. Risotto alla Milanese and the great rice traditions of Northern Italy tell the story of how a foreign food became an integral part of Italian cuisine. And yet, whenever we see a plate of creamy risotto, we rarely think of the murky water of the rice paddies. We rarely think of hands immersed up to the wrists.
