Why does vinegar slow food spoilage? The answer comes from the encounter between wine, oxygen, and acetic acid bacteria: a biological transformation capable of converting ethanol into acetic acid and creating an environment less favorable to the growth of many microorganisms. In this documentary by La Tavola Oscura, we first enter a vinegar factory in the Modena area, among small barrels, racking, evaporation, and years of concentration. We then move on to a modern industrial plant, where steel, controlled aeration, and measurement allow for the production of large quantities of vinegar in much shorter times. Two opposing systems, built around the same biological principle. Through the history of vinegar, we discover the difference between alcoholic fermentation and acetification, the role of oxygen, how the mother of vinegar works, and how acetic acid alters the environment surrounding a food. But we also discover the limits of preservation: acidity does not sterilize everything, it does not eliminate all risks, and it only works in conjunction with the other conditions of the process. The journey passes through cellars, laboratories, surface methods, industrial production, and Italian tradition, until it distinguishes products that are often confused: wine vinegar, Balsamic Vinegar of Modena PGI, Traditional Balsamic Vinegar of Modena PDO, and Traditional Balsamic Vinegar of Reggio Emilia PDO. Because dark color doesn't indicate age, density alone doesn't reveal acidity, and the word "balsamic" doesn't automatically identify the same product. Behind seemingly similar bottles, there may be completely different raw materials, times, regulations, and objectives. The history of vinegar doesn't begin with a legendary jug forgotten thousands of years ago. It begins every time an alcoholic beverage encounters air, microorganisms, and the right conditions. From that transformation, a liquid was born, capable of accompanying food preservation, Italian cuisine, and radically different production systems: one based on speed and regularity, the other on loss, concentration, and anticipation.
