Before it reached the bottle, wine was a fragile crop, exposed to rain, heat, fungi, insects, and delays in harvesting. Harvesting could proceed faster than the presses and containers for the grapes to begin to pile up, break, and deteriorate. An entire year's work could hinge on a few days, when every step had to be taken at the right time. In this documentary, we retrace the history of wine, starting with a seemingly ordinary bottle sold in Italy in 1986. From there, we trace ancient traces of grape wine dating back to the Neolithic, to fermentation techniques, to the preparation for the harvest described by Cato, and to the risks that persisted even after the grapes had left the vineyard. The journey then delves into the great crisis of phylloxera, the insect that attacked the roots of European vines in the 19th century and forced entire regions to rebuild their vineyards. Much of viticulture survived by grafting European varieties onto rootstocks derived from more resistant American species, an invisible underground transformation that still supports many vineyards today. But the danger didn't always come from nature. In 1986, some Italian wines were adulterated with methanol to artificially increase their alcohol content. The fraud resulted in deaths, serious poisoning, cases of blindness, and a crisis of confidence that affected even producers and territories completely unrelated to the crime. From that disaster arose an even stronger demand for analysis, controls, traceability, and a true correspondence between what a bottle declares and what it contains. This is the story of Italian wine before the table and before the bottle: a story of vulnerable harvests, uncertain fermentations, destroyed roots, rebuilt vineyards, and betrayed trust. Because before becoming wine, it was a whole year's work that could rot in a matter of days.
