How to Make Grandma-Style Pizza
There are four styles of pan pizza recipes in my cookbook, Pizza Night: Sicilian, Detroit, grandma, and cast-iron skillet. The dough used for each of these styles is the same: a high-hydration (88%) dough that, once baked, resembles focaccia in texture. All of the styles, with the exception of the grandma, require a parbake to set the crust before the toppings are added.
