Homemade Wine: From Garden Grapes to Bottle Every year we make wine. And every year it is completely different. Not because we change the recipe. Because the wine decides for itself. Different friends show up. Different grapes arrive. Different varieties, different gardens, different seasons behind them. Everything goes into one fermenter and what comes out two to three years later is something we could never plan and will never be able to reproduce. This is not a winemaking tutorial. It is a tradition. Once a year we invite friends who have garden grapes to bring whatever they harvested. Every bucket goes in together. We desteem, stomp, and ferment the whole mixed lot on skins using Fermentis wine yeast, no additives, no Campden tablets, nothing to sanitise or standardise what nature already decided. While the wine ferments in balloon bottles you will sometimes see pellicles forming on the surface, a natural sign of wild microorganisms at work. We leave them. The wine knows what it is doing. After pressing we rack, wait, rack again, and eventually bottle. Each friend gets their share back based on what they originally brought. Three years after that first harvest day. We use an old full size wine press for this. It takes a community harvest to justify it.
