I also talk about the proper proportions (ratios) for each type of espresso. This is the first supplementary video in the "how to make a good espresso at home" series. Basically, the difference between these three types of espresso is the amount of coffee to the amount of water. Proportion. Also known as the "ratio"! Conventionally, the appropriate ratios for each drink are: Ristretto: 1:1 Short: 1:2 Long: 1:3 Assuming I'm adjusting my extraction with 20g of coffee in the double portafilter, if I want to make a ristretto, I'll need to add 10g of coffee to each cup, totaling 20g of coffee on the scale. Therefore, 20g of ground coffee to 20g of beverage. In other words, a 1:1 ratio. In the case of a short espresso, using the same 20g of coffee, I'll need to add 20g of coffee to each cup, totaling 40g on the scale. Therefore, 20g of ground coffee to 40g of beverage. 1 to 2. For a long espresso, with the same 20g of coffee, I'll need to add 30g of beverage to each cup, totaling 60g on the scale. So, 20g of ground coffee to 60g of beverage. 1 to 3. And remember, this is a calculation. I mentioned 20g of coffee in the example precisely to round things off and make it easier to understand. And also because my machine's filter works very well with this amount of coffee. But not all filters hold 20g of coffee. Let's assume your filter holds a maximum of 18g. If you make a ristretto with 18g of coffee to 20g of beverage, you'll be drinking a ristretto slightly more diluted than the standard 1:1. In other words, if you change the amount of coffee in the filter, you must also change the amount of final beverage to maintain the same dilution as the standard. Let's imagine I'm setting the filter to 18g. In this 18g situation, the expected amounts of coffee marked on the scale for each type of extraction would be as follows: Ristretto: 18g of ground coffee for 18g of beverage marked on the scale; Short: 18g of ground coffee for 36g of beverage marked on the scale; Long: 18g of ground coffee for 54g of beverage marked on the scale.
