Easy Sourdough Blueberry Muffins | One-Bowl Recipe

These sourdough blueberry muffins are quick and easy to make, using just one bowl and sourdough discard. They are absolutely delicious and full of fresh blueberries. These muffins are perfect as an addition to your breakfast or for a quick snack anytime. INGREDIENTS 50 g sourdough starter discard 86 g plain yogurt 99 g cane sugar or granulated sugar 57 g unsalted butter melted 2 large eggs 1 tsp vanilla extract 185 g all purpose flour 1 tsp baking powder 1/4 tsp baking soda 3 g salt 1/2 tsp ground cinnamon 255 g fresh blueberries INSTRUCTIONS Preheat your oven to 400℉ and line a 12 cup muffin pan with parchment liners. Grease the pan if you don't want to use the liners. To a medium mixing bowl, add the sourdough discard, yogurt, butter, sugar, eggs, and vanilla extract. Whisk well until fully combined. Next, add the flour, baking powder, baking soda, salt, and cinnamon. Stir with a rubber spatula until combined. Then fold in the blueberries. Use a muffin scoop to scoop the batter into the muffin cups. Bake 20 – 25 minutes until golden brown. If you insert a toothpick in the middle of a muffin it should come out clean. Once the first 12 muffins are done, fill the cups with the remaining batter to finish baking.
