Add the first portion of sugar, then the applesauce, and gradually add all the sugar. Beat until soft peaks form. Finally, add a pinch of citric acid. ⚠To ensure the mixture is soft and spreads well in the pan, DO NOT overbeat it. 👉🏻In a saucepan, combine all the syrup ingredients, mix well until completely moistened, and place over medium heat. Cook the syrup, stirring constantly, using a timer, for ~3-4 minutes from the moment it boils. Try to finish the two processes simultaneously. Pour the hot syrup into the whipped mixture in a thin stream, using the mixer on high speed. ‼Once all the syrup has been added, beat the mixture for NO MORE THAN A MINUTE and IMMEDIATELY TRANSFER IT TO A BAG OR POUR IT INTO A FRAME.
