This time, Chef Murata from Kikunoi in Kyoto showed us how to make simmered bamboo shoots and rice cooked with peas. [Simmerd Bamboo Shoots] Ingredients 400g bamboo shoots, peeled 240cc dashi 30cc dark soy sauce dried bonito flakes, as needed leaf buds Recipe Cut the bamboo shoot (boiled and peeled) into 1cm-thick slices near the root, and make cuts on both sides. Cut the tip of the bamboo shoot into 4 to 6 pieces and cut into the root. Put the dashi, seasonings, and bamboo shoot in a pot and heat. Once boiled, put a cover (wet with water) directly on the food and simmer for 7 to 8 minutes. When the dashi is almost gone, remove the cover, add the bonito flakes, and shake the pot to spread all over. finally, serve it in a bowl and top with leaf buds. [Rice Cooked With Peas] Ingredients 450g peas (incl. pods) 3 cups rice 3 cups dashi (made from the pods) 15cc sake 1 tsp salt *Dashi Ingredients 2000cc water 2 5cm pieces of kombu Recipe Remove and separate peas from the pod. Wash the pods lightly, add water and kombu, and bring it to a boil. Once boiled, set the heat to low, simmer slowly for 10 to 15 minutes, and let it cool. Boil the peas in the dashi and add salt equivalent to about 1% of the weight of the peas. Wash the rice, drain and cover with a wet cloth for 30 minutes. Put the washed rice, the dashi, sake, and salt into the rice pot, mix lightly, and cook.
