The classic French dessert “Canelé” originated from the Bordeaux region of France. It is renowned for its unique combination of a caramelized crispy exterior and a soft, tender interior, with flavors of vanilla and rum. Mold size: 4.6 cm in diameter, 5.3cm in height Yields: 8 Ingredients: -Batter: milk 250ml unsalted butter 10g dark chocolate 20g granulated sugar 40g egg 1 cake flour 50g cocoa powder 5g rum 15ml -Topping: chocolate 15g corn oil 7.5ml How to make: 1.Heat 250ml milk, 10g unsalted butter and 20g dark chocolate over medium-low heat until barely boiling, let it cool completely. 2.In another bowl, mix 40g granulated sugar and 1 egg until well combined. 3.Sift 50g cake flour and 5g cocoa powder, gently stir until the batter is lump-free. 4.Pour the cooled milk mixture and mix well, sift for one time and cover the surface of the batter with plastic wrap, pressing it down, then refrigerate for 12 hours at least. 5.Bring the chilled batter to room temperature, then pour in 15ml rum and mix well. 6.Butter the mold with thick unsalted butter, then pour the batter into the mold of 90% full. 7.Preheat the oven to 220°C/428°F and bake for 15 mins, then reduce to 190°C/374°F and bake for 30-35 mins until the surface is dark brown. Once baked, remove from the mold and let it cool. 8.Melt 15g chocolate and mix with 7.5ml corn oil until well combined.
